Originally there were 102 volumes, but unfortunately only 37 have survived. These 37 volumes include the ones on animals and plants, so we can still read what Pliny had to say about cucumbers and melons. He tells us for example about the emperor <a href=\"https:\/\/en.wikipedia.org\/wiki\/Tiberius\" target=\"_blank\" rel=\"noopener noreferrer\">Tiberius<\/a>\u00a0(42 BC &#8211; 37 AD) who wanted to eat cucumbers all year round. In order to make that possible, raised beds on wheels were made, that could constantly be moved to the sunniest spot in the garden. During winter the beds were covered with a lattice clad with\u00a0<a href=\"#spiegelsteen\">muscovite<\/a>. During summer, cucumber plants could also be used to cover pergolas and rooftops by climbing them. The fruits would be hanging down.<\/p>\n<p>On the picture Tiberius is enjoying his stay in the\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Villa_Jovis\" target=\"_blank\" rel=\"noopener noreferrer\">Villa Jovis<\/a>\u00a0on Capri (<em>Cassel&#8217;s Illustrated Universal History<\/em>, 1882). In this case, the plant covering the pergola is a grapevine.<\/p>\n<h2>What kind of cucumbers?<\/h2>\n<p>Our cucumbers (<em>Cucumis sativus<\/em>) were probably already known to the ancient Romans, although according to Andrew Dalby (see <a href=\"#bibliography\">bibliography<\/a>) there is no archaeobotanical or written proof of this. The soft seeds are so perishable that none have survived, and in those days Greeks and Romans made no distinction between cucumbers and a variety of the musk melon,\u00a0<em>Cucumis melo var. chate<\/em>, that is still known as the &#8216;Italian cucumber&#8217;. This type of melon does indeed taste like cucumber, except without the bitter taste that was inherent in cucumbers of old.\u00a0This bitter taste is caused by a toxic biochemical called <em>cucurbitacin C<\/em>, but nowadays you will not run across these bitter cucumbers unless you cultivate them yourself. Do be careful in that case, as cucurbitacine can be deadly when consumed in high doses (approximately 300 mg). There\u2019s no reason to panic, however, as there is no cucurbitacine in supermarket cucumbers or the melon cucumber variety. In the Netherlands, it is possible to order melon cucumber seeds at Vreeken\u2019s Zaden in Dordrecht, where they have several different kinds in stock.<\/p>\n<h2>Pliny the Elder<\/h2>\n<p>I first heard about Pliny the Elder in high school. We had to translate the eye-witness account of his nephew\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Pliny_the_Younger\" target=\"_blank\" rel=\"noopener noreferrer\">Pliny the Younger<\/a>\u00a0(61 &#8211; 113) of the eruption of the vulcano <a href=\"https:\/\/en.wikipedia.org\/wiki\/Mount_Vesuvius\" target=\"_blank\" rel=\"noopener noreferrer\">Mount Vesuvius<\/a> in 79 AD from Latin.\u00a0Among other things, he describes his uncle\u2019s death as a result of the volcano\u2019s eruption at the coast of Stabiae, near Pompeii.<\/p>\n<h2>The original &#8216;recipe&#8217;<\/h2>\n<p>The &#8216;original recipe&#8217; is acually just a remark at the end of the chapter with &#8217;11 remedies with different types of melons.\u00a0<em>Naturalis historiae<\/em>, book 20, chapter 6. Latin text is taken from the edition of Mayhoff (see\u00a0<a href=\"#bibliography\">bibliography<\/a>).<\/p>\n<div class=\"one-half first\"><em>Coctos deraso cortice ex oleo et aceto ac melle iucundiores esse certum est.<\/em><\/div>\n<div class=\"one-half\">\nTruly, cucumber, peeled and cooked with oil, vinegar and honey is most enjoyable.<\/div><div style=\"clear:both;\"><\/div><\/p>\n<h2><a name=\"recept\"><\/a>Modern adaptation of the recipe<\/h2>\n<p>I have changed nothing in the recipe]. No herbs were added, no garum. Whether the dish is prepared with ordinary cucumbers, snake cucumbers or the &#8216;Italian cucumber&#8217; is up to you. It may seem strange to eat warm cucumber, but try it. It does not taste bad.<br \/>\nFor\u00a0<span class=\"yield\">2 to 3 persons<\/span>\u00a0as\u00a0<span class=\"tag\">side dish<\/span>;\u00a0<em>preparation in advance<\/em>\u00a0<span class=\"preptime\"><span class=\"value-title\" title=\"PT25M\">25 minutes<\/span><\/span>;\u00a0<em>preparation<\/em>\u00a0<span class=\"cooktime\"><span class=\"value-title\" title=\"PT5M\">5 minutes<\/span><\/span>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"photo wp-image-4226 size-full aligncenter\" title=\"Cucumbers prepared according to Pliny. Sprinkle with salt and leave for twenty minutes in a colander. Gently squeeze excess liquid from the cucumber slices.<\/p>\n<h3>Preparation<\/h3>\n<p>Heat oil, vinegar and honey in a pan. It is as transparent as glass, as you can see in the picture. The best muscovite was found in Spain. The plates were used as window panes until glass windows became more available. The modern name is is\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Muscovite\">muscovite<\/a> (from\u00a0<em>vitrum muscovitum<\/em>, glass from Moscow).
